BLACK- DORIS PLUM WINE
Black Doris Plums are like huge
succulent grapes with everything the grape has to offer and more.
When totally tree ripened, they are processed as they were in a bygone
era, put in barrels and brewed in the traditional manner.
The resulting wine is a Pinot Noir style, rich in plum and oak flavours,
unfiltered and perfecting with age.
A wonderful accompaniment for slow creative food. 75cl 12.5%alc
OMEGA
PORT
Natural,
unfortified Port made in the traditional manner of slowly adding organic
sugar to the fermenting plums.
The alcohol, sugars and flavours are then optimized over time for a
taste experience. An after dinner wine. 75cl 15%alc.
CELTIC
CIDER
French style bottle
fermented cider made from 100% organic apple juice brewed to a natural
dryness with crisp apple and oak flavours. Best served cold and shared
with friends before a meal. Methode Traditional. 75cl. 8% alc. (dry)

MERLINS BREW
A
dry, methode traditional wine made from the rich juice of the tree
ripened braeburn apple. As with quality champagne, the wine is left
for at least a year to brew on the lees, which remains in the bottle
continually adding to the complexity and rich apple flavours. Serve
cold and pour with care. Splendid for celebrations. 75cl. 12.5%

Thirty
percent of the volume of a bottle of Celtic Mead is pure honey taken
from the foot hills of the Tararua mountains. It takes three to five
years of slow maturing before the rich flavours hidden in the honey
manifest to produce a wine that is
subtle and smooth. Great chilled as a desert wine or heat just above
room temperature to experience the wonderful aromas. 75cl 11%alc.
GREEN
GINGER WINE - - - - - - An
extremely versatile wine with a pungent warmth that penetrates your
soul. Ginger has healing elements, some of which need to be brewed
for the curative energy to be released. Drink slowly to savour the
spectrum of flavours. Ginger Wine blends beautifully with whisky,
brandy or rum. Great with lemonade for a refreshing summer drink.

BRAEBURN
WINE
The full flavour
of organic braeburn apples transformed into a wine that is comparable
to most top quality grape varieties. As with other Celtic Wines
the brew is unfiltered and left to mature and clear naturally. A
dry white with a hint of oak. 75cl. 12% alc. (dry)
FIEJOA
WINE
A dry refreshingly fruity wine which is medium bodied with a clean,
crisp finish.
The tropical fragrance is similar to a pinot-gris.
Perfect accompaniment to a smoked chicken salad served with brie cheese,
herbs and a light vinaigrette.
